Sometimes when I lie down or sit up, I feel like my heart has stopped beating or that it is pushing too much blood. Could stress be the cause?

This can indeed be what is called extrasystoles.
Be aware, on the other hand, that it happens in a normal way that the heart can beat non-regularly the moment of a beat. It will feel like there is too long a pause between beats and that the next beat is "stronger". One should not worry in cases like this.
If it happens really often, however, one will look to discuss it with a doctor.
