I have rheumatoid arthritis, ankylosing spondylitis and Crohn's disease. I am currently taking Methotrexate and Cortisone and I will soon be taking Cimzia. Can taking a product like Genacol Optimum be beneficial?

The glucosamine, chondroitin and collagen contained in Genacol Optimum help especially in situations of osteoarthritis, that is to say non-inflammatory joint pain. The conditions you listed in your question are all related to inflammation, which leads me to believe that it would be surprising if Genacol helped you.

That being said, it is not impossible that you have some osteoarthritis despite your young age. Trying Genacol for 2 to 3 months would validate if this medication could indeed help you, although I would be surprised. For your information, there is no interaction with the medications listed in your question.
